Apollon’s Gold is thrilled to announce the comeback of the Yellow Typica, a distinctive coffee initially spotlighted at the WBrC competition. Once a rarity with a mere 23kg produced, it is now exclusively crafted for Apollon’s Gold, a boutique roastery nestled in Tokyo’s vibrant heart.
This year’s harvest from Tarrazu is exceptionally clean and sweet, boasting a transparent quality with vibrant oroblanco and sweet pear flavors, complemented by a flowery finish and delicate white tea aftertaste. Its silky body and mild acidity enhance the unique flavors of the Yellow Typica cultivar, making it a roaster’s favorite and a hallmark of high-elevation Tarrazu coffee.Â
Recommended Resting Time:Â
We recommend brewing this coffee at the minimum of 6 weeks off roast and have found it to develop vibrant acidity and sweet florals toward 8 weeks off roast.Â
