Pie San Exclusive
This week is exciting as it is our first time featuring Apollon’s Gold from Tokyo, Japan! This is one of my favorite roasters due to their hyperlight roasting style which emphasizes maximum clarity in the cup. This coffee is a Costa Rica Yellow Typica Honey process that has flavor notes of Oroblanco, Pear, and White tea. In the cup you will find very complex flavors and presentation of structured acidity and sweetness. This is a very expressive cup and I suggest you taste it from hot to cold and see how the dynamics shift. When hot, I find there to be a very forward presentation of acidity and sweetness, and when it cools down the acidity starts to peak through. It’s also CLEAN. Overall an insanely fun coffee and our first time featuring a coffee with this roasting style!
