This coffee is a one-of-a-kind gem, offering a sweet and spicy experience that reminds us of our favorite desserts. Imagine sipping on flavors of cardamom, cinnamon, honey, pistachio, and buttercream frosting!
The journey to this unique profile starts with picking coffee cherries at their peak ripeness. These cherries are then disinfected with ozone and undergo a 72-hour anaerobic fermentation in water with Lactobacillus in a milk culture medium. After fermentation, the coffee is pulped and mixed with leachates from the fermentation process to enrich it with flavor precursors. A thermal shock wash process follows, locking in these flavors and ensuring a good drying process.
