Introducing Letty Bermudez, a testament to innovation and pushing the far limits of coffee excellence. This special gesha lot was commissioned by Manhattan’s Ben Morrow from the visionary coffee producer Diego Bermudez. The coffee cherries undergo a complex double fermentation thermal shock process. This process includes 60 hours of aerobic fermentation in a pressurized tank, followed by 36 hours of anaerobic fermentation at 18°C with Leuconostoc bacteria, and a meticulous thermal shock finish. The drying is perfected in the Enigma dryer for 29 hours, achieving an ideal humidity of 10%.
Named after Diego’s youngest daughter, Letty, this coffee symbolizes the hope for a new evolution in coffee passion and innovation, driven by the next generation. The flavor profile is as unique as its creation story, with vibrant notes of haribo peach, milky oolong, and mango, capturing the essence of yellow fruits at their peak.
