Reposado Natural-Processed Milenio
This week’s coffee is a Costa Rica Reposado Natural from Pair Cupworks (Mesa, Arizona). In the cup I get Blackcurrant, Red Wine, and Cacao Nib! This is a new varietal called the Milenio and it’s a hybrid between Sudan Rume and Timor. I find this coffee to have a pleasant level of funk and I have pushed out the ratio to 1:17 so you get more lingering acidity. This coffee has some of the most expressive aromatics that I have gotten from a Costa Rican coffee and that translates into the cup! Most notably, I get a loud layering of red fruit that transitions into a sweet cacao nib presentation in the finish.Â
