Why We Like It and Resting Time:
This washed pacas is incredibly balanced and sweet! We find a deep blackberry note that integrates into a sweet milk chocolate finish. This coffee is very flexible in all brewing methods. If you want to have a very present blackberry acidity we recommend you brew this on pourover, while on immersion and espresso this coffee will taste like chocolate covered berries. We found this coffee to fully open up around 4 weeks off roast where the blackberry acidity becomes much more structured and present with the sweet milk chocolate finish.
